Viva Mexico: Guacamole!

I simply love Mexican food and on my recent Punta Mita family getaway I couldn’t stop devouring chips and guacamole , tacos and guacamole, guacamole with guacamole… Yes, I have a little bit of an obsession! It was just sooo good! So in honor of Viva Mexico Week and Cinco de Mayo, we are featuring some of our favorite guacamole recipes. Some traditional, and some are not what you would expect, but they are all “yummy delicious” –  My son’s highest food rating. Whip up any one of these and you will be the toast of your Cinco de Mayo fiesta. Muy guacamole chic! xx

This quacamole recipe comes from me and is the one I learned from my avo farmer husband. So it is totally legit! Ready for how simple this is?

1. Buy some perfectly ripe avos. This means you should NOT be able to make a dent with your finger. You should only be able to lightly press in to the avocado. And if you can’t push in the avo skin at all then it isn’t ripe.

2. Buy some quality pico de gallo. Not salsa- pico de gallo. This is chopped tomatoes, onions, cilantro, jalapeño and a little bit of lime juice. You could chop this all on your own, but if you can buy a good, fresh one save yourself some time.

3. Combine with some perfectly ripe avos cut into chunky squares. Not too small! The focus is on the delicious avo.

4. Combine the two.

5. Add sea salt & fresh squeezed lemon/lime as needed.

6. Finally make sure to have high quality chips! One of my fave brands available throughout the US is “Have’a Corn Chip“. If you are an OC local, you can’t beat the El Toro Bravo chips.

*The following recipe is from Avocados From Mexico:

INGREDIENTS:

-2 avocados from Mexico, halved, pitted, peeled and cubed
-1/4 cup onion, finely diced
-1 tsp fresh garlic, minced
-1/2 cup feta cheese, crumbled
-1 tbsp cilantro, finely chopped
-Limejuice and salt to taste

DIRECTIONS:

Very gently, combine all ingredients in a medium size bowl for a chunky guacamole.

*The following recipe is from one of our fave celebrity chefs, Ina Garten

INGREDIENTS:

-1 pint grape tomatoes, halved
-1 yellow bell pepper, seeded and 1/2-inch diced
-1 (15 ounce) can black beans, rinsed and drained
-1/2 cup small diced red onion
-2 tablespoons minced jalapeno peppers, seeded (2 peppers)
-1/2 teaspoon freshly grated lime zest
-1/4 cup freshly squeezed lime juice (2 limes)
-1/4 cup good olive oil
-1 teaspoon kosher salt
-1/2 teaspoon freshly ground black pepper
-1/2 teaspoon minced garlic
-1/4 teaspoon ground cayenne pepper
-2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced

DIRECTIONS:

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well.

Just before you’re ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature.

For adults only.  🙂  The following recipe is from The Scoop

INGREDIENTS:

-4 ripe, medium Fresh California Avocados, seeded and peeled
-2 Tbsp. fresh lime juice
-1 Tbsp. fresh orange juice
-3 Tbsp. good quality tequila
-2 cloves garlic, minced
-3 Tbsp. minced red onion
-2 tsp. minced serrano pepper (optional)
-2Tbsp. finely chopped cilantro (optional)
-1 tsp. coarse sea salt
-1 tsp. black pepper

DIRECTIONS:

In a bowl, mash avocados with lime juice, orange juice, and tequila leaving chunks of avocado if you like guacamole with texture.
Add the garlic, onion, serrano, cilantro, salt and pepper. Adjust seasoning to taste.
Serve with tortilla chips or a healthier option, jicama sticks.
