Foodie Friday: Sneak Chic

If your kids are anything like mine they are not always thrilled about eating healthy foods (and if your kids are PLEASE share with us your secret). Since this is the case I have found ways to sneak in their greens. These simple, and I mean simple, since time is of the essence in this household, recipes have everyone feeling great… especially mommy!  Isn’t it funny how we are proud of ourselves when we get our kids to do the “right” thing?  Or actually isn’t it funny?  We should feel this way. Sometime victories can be few and far between!! Hopefully these recipes will give you a few victorious moments.

First up the “Power Smoothie”, and in case you didn’t know this is the smoothie Iron Man drinks ( 😉 ). The power packed ingredient in this smoothie is kale. Fortunately, kale has very little taste when combined with the other ingredients (just don’t put too much) making it a great way to sneak in the vitamins.

Here is the basic recipe I use to make 3-4 smoothies.

INGREDIENTS:

-2 bananas
-1 cup strawberries
-½ cup blueberries
-1 cup orange juice

-1 cup ice (or more)
-1-2 large handfuls of kale

Throw it all in a powerful blender (I am obsessed with my Vitamix) and – voilá – the “Power Smoothie.”

Another way I get my kids to eat something green is with kid friendly quacamole. You would think they would happily eat sliced avocado seeing as we are an avocado farming family, but this is not always to case. Again, rather than negotiating I found a way they will happily shovel the nutrient dense food in their mouths… whine free!

Kid Friendly Guacamole (no onion, no tomatoes, no jalapeños)
Serves 3-4 kiddos

INGREDIENTS:

-1 large Hass Avocado
-1-2 pinches of sea salt
-All natural tortilla chips

Simply scoop out the avocado, mash it with a fork and add your sea salt. Serve with a few chips, put it on a chicken taco or use for dipping a taquito. The uses are endless!

Finally, my kids love edamame beans. These power backed little beans are my quick go to for snacks and dinner. Some grocery stores, like Bristol Farms and Whole Foods sell them steamed and packaged in their sushi areas. They are also available shelled and frozen at most other grocery stores.

I often pair with avocado rolls (as seen in this photo). Double the greens in this meal, and when (sometimes IF) this meal gets gobbled up, I definitely get that “Proud Mommy” feeling. I will take it whenever and however I can get it!

Because it is always chic to give.  As moms we are always giving and most of the time it is not even appreciated until our children are much older (let's hope!)
