Foodie Friday: Salad Chic

All this bathing suit talk has the  MCbJ team focused on healthy eating. This salad by lalasweets proves that healthy tastes so good. Not to mention we feel and look better for it! Bon appétit!

I’m always looking for a good salad. One with ingredients you wouldn’t normally expect to come together so well. This particular salad is not only easy to make, but also brings a medley of flavors beautifully together. This is a refreshing and simple salad… with very few ingredients. You wouldn’t think the licorice flavor of fennel would balance well with the cheese, but it really does! The presentation is important too. Everything is thinly sliced like paper so it tosses easily together and you create a “shaving” of a salad, rather than a bulky bowl of each ingredient. Test it out… I’m sure you won’t be disappointed!
*Keep the dressing handy because it tastes wonderful on roasted veggies… or even as a marinade for chicken the next day!

Fresh Apple Fennel Salad

Serves: 2-4 (depending on portion)
Prep Time: 20 minutes

INGREDIENTS

-2 Granny Smith apples, peeled, cored and paper thinly sliced with knife or mandolin
-2 bulb fennel, shaved with a knife or thinly sliced with mandoline
-5 ounces Manchego Cheese, thinly sliced
-1/4 cup lemon juice
-2 TBSP extra virgin olive oil
-1 teaspoon honey
-1 teaspoon champagne vinegar
-1/4 teaspoon salt
-1/8 teaspoon pepper

DIRECTIONS:

1. Combine dressing ingredients (lemon, olive oil, vinegar, honey, salt and pepper) in a sealable container and shake to emulsify.
2. Combine shaved fennel, apple and cheese in a mixing bowl and toss. Toss the salad with the dressing. Distribute between serving plates. Serve immediately.
