Foodie Friday: Flourless Chocolate Cupcakes

Not that I am claiming to be Martha Stewart or anything close to that, but I used to bake more than I do these days. This was especially true when I was pregnant with my second and only had one child-… we were cookie-baking machines! My son had nearly memorized the recipe and good friends also reaped the benefits as we were always eager to give out our “prized” cookies.

However, since having my third child, finding (A) the time and (B) the ability to cook, let alone bake with all three around has been a challenge. Yet, this week I decided to rise to this challenge! Our own fabulous MOMMY CHIC chef Tiffany had sent me wonderful and healthy cupcake recipe that I was determined to try.

Plus with Halloween approaching it was the perfect time to use our darling new aprons, which were an impulse buy on a recent trip to Williams Sonoma with my little three-year old. His sales skills are so good I think he should be getting commission from every store we frequent. He always gets me to spend more than I planned, and trust me, I really don’t need any encouraging!

So here we are: a sub par chef, three young kids, and my fabulous sous chef/photographer/hubby/bartender (yes, he even poured me a glass of champagne mid baking chaos 🙂 )… we were more the kitchen “Scream Team” (especially when it came to cracking the eggs) than the “Dream Team” but we did have fun!

At the end of it all we happily devoured our delicious and healthy cupcakes. It was a good time had by all! Perhaps I will start baking with the kids again… at Christmas time! xx

PS- I was planning to make the frosting and add orange food dye for Halloween, but I ran out of energy (and patience). Besides, the kids really did not need the sugar anyway. Maybe next time. 🙂

Philanthropy

Because it is always chic to give.  As moms we are always giving and most of the time it is not even appreciated until our children are much older (let's hope!) So it may seem challenging to give to anyone else, but we should all try no matter how little the amount or the time. Thinking outside of ourselves is good for our hearts and those of our children.
