Foodie Friday: Avocado/Egg Toast

Another delish recipe from MCbJ contributor lalasweets.  This one is yummy and healthy… Not to mention it includes avocados – the best fruit (yes, fruit) on the planet.  Okay, I might be a little bias since my hubby is an avocado farmer, but truly I love them for all their health benefits and fabulous taste.  I highly recommend trying out this recipe ASAP!  Happy breakfast chic.  xx

avocadotoast

INGREDIENTS:

-One slice of Ezekial bread
-1/2 small to medium avocado
-1 egg
-Fresh sage, thinly sliced (Julienne)
-Rock salt (my favorite is a Pink Himalayan)
-Pepper

DIRECTIONS:

1. Toast the Ezekiel bread
2. Meanwhile, cook egg in non-stick sauté pan over low heat. To cook it through, flip it over about 3 minutes in to the start time. I prefer my egg cooked through, however over-easy is another option.
3. When toast is done, spread avocado over.
4. When egg is done, slide on top of avocado.
5. Sprinkle rock salt, sage and pepper over the top and enjoy!

P.S. In case you are counting calories or want to know just HOW good this is for you! This meal totals 314 calories and 12g of protein.

Because it is always chic to give.  As moms we are always giving and most of the time it is not even appreciated until our children are much older (let's hope!)
