Seeing as this week has been all about bringing it back to the basics I would like to share an easy, but delicious fall favorite: the baked spaghetti squash.
My husband and I still distinctly remember how this little food gem was brought into our lives. It was in December 2007 right after I had my first baby. My mom had come to stay with us and cooked several excellent meals. While we loved it all it was the baked spaghetti squash that became a consistent meal in our home. What a perfect and easy way to feel like you are eating “pasta” but getting more vegetable vitamins.
I am still working on getting my kids to love it as much as we do. I think the word, spaghetti, really throws them. They tell me this is not spaghetti. Oh well, at least my hubby and I have a substitute for when they have pasta. We top our “spaghetti” with Parmesan or sometimes marinara the same as I do theirs.
