Lately I have been really into two things: coconut and pumpkin. So I was extra excited when Mommy Chic chef Tiffany sent me this recipe. Coconut has been on my radar since I recently discovered it has probiotics helping with digestion, and not to mention I love the taste! Pumpkin, well that just goes along with the time of year. I am even thinking these muffins will be the perfect soccer morning snack as I am in charge of that for my sons’ teams on Halloween.
