Foodie Friday: The Hubby’s Roast Chicken (Original Recipe by Julia Child)

Life is BUSY….busy, busy, busy! And I am certain I am not the only mama (working or not) that runs from one thing to the next fueled by caffeine and an inner voice telling me I must be everything to everyone and be everywhere at once. I wish all too often I could clone myself… A couple times! But seeing as that is not currently an option I have found that I must come up with other solutions. First step for me has been acceptance. Accepting that I need someone (at times someones) to help me. This is not an easy one for me as I wish I could do everything for each one of my kiddos and tend to be slightly controlling(yikes!)…but it is simply impossible!

There is also realization. Realizing that I cannot do everything and neither can my kids. I (they) cannot do every single sport or activity, and attend every party or event. Sometimes it is just TOO MUCH… and sometimes it takes a rainy day to realize how nice and necessary it is to just hang out at the house in pjs (the boys stayed in theirs all day until they changed into fresh pjs for bed:)).

It was last Sunday prompted by the torrential rain storm** to hit Southern California that we had a rare, totally free day and a good excuse not to leave the house. After all, it is hard enough to get all four kids out the door on a good weather day let alone in strong wind and rain.

Hence… we did nothing and it was amazing! By nothing I mean watching movies, playing games (Jenga, Sorry & basketball when the rain stopped) and we cooked…. Well, my hubby cooked! And he is gooood (you can get his “go-to” roast chicken recipe below).

Best part of the whole day? Was the whole day! Why? My kiddos were so happy. My hubby and I were so happy. It was a pressure-free day and it was wonderful. It brought light to the fact that sometimes a day like this is just what the family needs. After all, everyone needs days where they can wear pjs all day:) xx Jess

** it was just your average rain storm, but for us Californians it was like the world stopped lol!:)!

*This is the recipe the hubby uses but he adds more vegetables and did “french fries” aka sliced potatoes baked with olive oil.

The baby can’t be left out so I threw all the ingredients in my baby Cuisinart plus a little water and voila her own version of roast chicken.
